Shiner's Stash uses 100% Prime Beef Eye-Round & Pork Loin, sliced thick and cut against the grain. They make all their jerky themselves, in their own USDA inspected facility, as opposed to contracting it out to a co-packer. They currently have 19 varieties of beef and pork jerky.

This Cajun Spice variety is described by company as, "the perfect blend of southern Cajun spices. Combination of "TWANG" overtones and delicate sweetness with a Louisiana Cajun punch. No spice/heat."

Review

The first flavor I pick up on this is a marbleized meat flavor with a light, watered down soy sauce. The chewing brings on a bit more of a pan-fried steak flavor with hints of oregano and black pepper.

For being marketed as "Cajun Spice", it doesn't really hold up. I get only faint amounts of seasonings, and most of it is a light oregano and black pepper, though touches of garlic and onion linger in the background. It's not at all the bold, spicy, peppery, well-seasoned flavor we think of when eat Cajun cuisine. This does have the "delicate sweetness" the company described, but I don't really find the "twang" or the "punch".

Otherwise, the primary taste profile is that of a pan-fried steak, with its fatty, marbleized character and light swashes of oregano and black pepper, along with a light, watered down soy sauce base. The natural meat flavors comes through pretty well in this.

The chewing texture is very meaty, though quite dry. It has a light crunchiness at first, but eventually chews down soft. It actually takes on a somewhat steak-like chewing texture, though still a touch crumbly. I don't find anything stringy or unchewable. There's a bit of marbleized fat on these slices, and they kick in a little bit of fatty flavor.

Verdict

This Cajun Spice jerky from Shiner's Stash seems to deliver a much more toned down interpretation of bayou-style flavor to the point that it hardly deserves the billing as a Cajun variety. It's not bold, it's not lively, it's doesn't awaken the senses. Instead, it's rather subdued, and somewhat plain-tasting. At best, it has a faint oregano and black pepper seasoning. But on its own merits, it does deliver a strong natural meat flavor, tasting more like a pan-fried steak with all of its fatty, oily flavor, and a touch of brown sugar sweetness to finish it off. It's certainly still snackworthy; it just doesn't offer much Cajun flavor.

The first flavor I pick up on this is a light salt mixed into a light fatty/oily taste. There's a cheesy flavor that comes on right away. The chewing brings on a saucy, natural meat flavor much like roast beef dipped into aus jus, but laced with a light black pepper.

For being named, "Bacon & Swiss", it holds up somewhat. The bacon part is hard to identify in flavor, though I can see plenty of bacon bits stuck to the cheese. The Swiss part is well represented in both visual and flavor. There is clearly a swiss cheese flavor throughout the chewing, more of the mild variety than the sharp.

Otherwise, the primary taste profile is that of roast beef dipped in aus jus with a light black pepper seasoning, along with a well-noticed swiss cheese flavor. You'll get a fair amount of fatty/oily flavor from both the marbleized cuts of beef and the cheese.

The chewing texture is very meaty, yet semi-moist. It actually takes on a steak-like feel once chewed down soft, comparable to something cooked well-done. The pieces are easy to bite off, and yield nothing stringy or unchewable.

Verdict

This Bacon & Swiss beef jerky from Shiner's Stash delivers a decadent snackability through its heavy layer of melted swiss over a beefy, natural meat flavor. The bacon bits don't offer much taste even though they are easily visible on these pieces. Instead, this jerky is largely about the loads of shredded swiss melted on to slabs of beef jerky. The jerky itself is plain, perhaps to help bring out the bacon & swiss flavors. What I really like in this is the fatty flavor that comes from the marbleized cuts of round, it really brings out the taste of real beef. And with the light dusting of black pepper, and the heaps of shredded cheese, it reminds me of my college days, living off cheesesteak sandwiches from the campus café.

The first flavor I pick up on this is a mix of beefy, cheesy, and a lightly seasoned beef broth. The chewing brings on a natural meat flavor plus a more defined cheddar cheese with the parmesan in the background.

Considering it's "Cheddar & Parm" namesake, it definitely lives up. I get a well-noticed sharp cheddar flavor along with a lighter parmesan that tends to linger in the background. Of course, the thick layer of melted cheddar provides an equally matching visual that prepares the senses. There's also an cheesy aroma that hits you when you open the bag.

Otherwise, the primary flavor profile is a pan-fried steak flavor lightly seasoned with salt and pepper, with a light oily flavor, and the cheesy, buttery flavor of cheddar and parmesan. The level of salt is light, and there's little to no spiciness.

The chewing texture is very meaty, yet semi-moist. It actually takes on a steak-like feel once chewed down soft, comparable to something cooked well-done. The pieces are easy to bite off, and yield a light stringiness, yet nothing unchewable.

Verdict

This Cheddar & Parm beef jerky from Shiner's Stash delivers a decadent snackability through its heavy layer of melted cheddar over a beefy, pan-fried, natural meat flavor. I love the marbleized, oily flavor that mixes into the meat, along with the light salt and pepper, because it reminds me of throwing a New York Strip on the fry pan during a Sunday morning hangover. The gobs of cheddar with its parmesan sprinkling strikes at what our hearts yearn for as Americans, even though it's not really what's best for our tickers. All in all, you could take your own pound steak, fry it up, sprinkle it with salt and pepper, throw cheese all over it, and recreate this yourself. But why go through all that effort when Shiner's Stash has done all this for you, and packaged them into these neat little bags?

This Black Pepper & Garlic is described by company as, "a perfect spice blend of coarse black pepper & freshly minced garlic", going on to say that it pairs well with a stout beer, heavy body red wines, honey bourbon, & clear corn liquor.

Review

The first flavor I pick up on this is a fatty, marbleized steak character. It's mixed in with a light salt, followed by garlic, black pepper, touches of coriander, and then a faint sweet. There's a "saucy" flavor, similar to beef broth. The chewing brings on more of the same flavors but in greater definition. However, there's also the natural meat flavors.

For being labeled, "Black Pepper & Garlic", it holds up adequately. The black pepper and garlic flavors are there, they just don't burst out and take the spotlight. The black pepper is moderate, while the garlic is light, yet together they still back up the labeling enough to give a black pepper/garlic lover their money's worth. The black pepper also generates a light spiciness, but still rating "mild" on our heat scale.

Otherwise, the primary taste profile is a marbleized, seasoned steak, with a moderate level of black pepper and garlic, and a saucy beef broth marinade. There's nothing tangy or fruity in this, it's more saucy and seasoned. The teriyaki and soy sauce ingredients tend to mix into beef broth, and aren't well identifiable on their own.

The chewing texture is very meaty, and once chewed down soft, has a steak-like texture. The pieces are chewy, but not tough. Some are actually soft. Being that these slices are from eye of round, cut against the grain, the streaks of fat are noticeable yet not chewy at all; they melt in the mouth and add a little bit of oil to the chewing.

Verdict

This Black Pepper & Garlic jerky from Shiner's Stash delivers just enough of the seasoning blend to create a nice savory profile against a saucy beef broth marinade. The well-marbleized cuts of round give off a nice fatty texture to create a fresh-off-the-grill character. It's like dipping that seasoned end piece of a slice of prime-rib into a cup of aus jus. Considering the black pepper and garlic are the top billed ingredients in this variety, their level of flavor is rather light for my preference. In fact, overall, this is a mild tasting jerky, and nothing really bursts out aside from the marbleized steak.

The first flavor I pick up on this is a sweet, followed by a mild BBQ sauce and hints of smokiness. There's also a fatty, marbleized steak character. The chewing brings on a bit of salt, and a light natural meat flavor.

For being marketed as "Sweet Mesquite BBQ", it holds up. For one, it's very sweet. Two, there's a light smoky character to the flavor, but it's hard to identify it as mesquite versus hickory. The BBQ flavor is well noticed, but it's a mild sauce, with little spiciness to speak of. The BBQ is lightly tangy from the tomato paste and vinegar, but that's about it.

Otherwise, the primary taste profile is a heavily sweet, and very mild, yet tomatoey BBQ sauce, with a bit of smoke, over a light natural meat flavor.

The chewing texture is very meaty, and once chewed down soft, has a steak-like texture. The pieces are chewy, but not tough. Some are actually soft. Being that these slices are from eye of round, cut against the grain, the streaks of fat are noticeable yet not chewy at all; they melt in the mouth and add a little bit of oil to the chewing. The BBQ sauce in this adds a slimy texture.

Verdict

This Sweet Mesquite BBQ jerky from Shiner's Stash goes full sweet with its mild, tomatoey BBQ sauce, that it seems more candied than it is barbecue. There's just enough smoke flavor in this to create that BBQ character, however I found the BBQ sauce very mild, in fact too mild for my preference. I felt it needed more seasonings to make it more bold, more lively. As it is, this jerky tastes flat, or seems dull. It needs that extra something to perk up the flavor. It still offers a level of snacking satisfaction for its steak-like chewing, and for its sweet-and-salty nature, but compared to other BBQ jerky varieties I've reviewed, it doesn't waken the senses.

I highly recommend anyone to stop by and try the jerky. Not only was I treated good but their jerky has to be the best on the market hands down!!!

Shiners Stash - Bacon 'N Swiss Beef JerkyThere are no liquid ingredients used in the marinade. Instead,
raw Swiss cheese and grated Parmesan cheese are used. Minimally processed cheeses are a good source of calcium, and some vitamins.

The sugar level is great at under 1 gram of sugar per 43 grams (1.5oz) of jerky. The salt level is quite high at around 566mg of salt per 28 grams of jerky. Our preference is 350mg of salt or less per 28 grams of jerky.

This jerky does not qualify to have no sodium nitrite, where similar potassium sorbate is used as the main preservative, apart from minimally processed sea salt.

This jerky does not qualify to have no MSG added. The highly processed flavor enhancers hydrolyzed soy protein and hydrolyzed corn protein are used in the beef base. Similar to MSG, disodium inosinate and disodium guanylate work synergistically to enhance the flavor of food, in this case beef.

I carefully opened the bag before slowly spreading it open with my fingers. As I was gently going down, I plunged my nose into this inviting opening. At first just going in with the tip and then all the way as I could no longer resist the urge and the temptation. I took a long deep breath and soaked what seemed to be the promise of an attractive and most enjoyable experience. The beautiful aroma of Swiss cheese and smoky bacon filled my nostrils. I was immediately elated by this jerky and it certainly delivered on every level.

These generous strips are packed with flavor and the texture is equally amazing. Each jerky strip is encrusted with a copious amount of cheese. This makes for a wonderful and very unique texture. This texture really set this jerky apart from most jerky’s I’ve previously tasted.

The nice and pleasant beefy taste is beautifully complimented by some richness and followed with subtle notes of smoky bacon and Swiss cheese. Although, this jerky is rich and a bit heavy, the added flavor and incredible texture really makes up for it all.

This is definitely not a boring run of the mill jerky; it is a very ingenious and cleverly developed jerky. I raise my hat to Shiners Stash Jerky for coming up with such a fun and flavorful new jerky. These folks are not afraid to step up, beat new paths and create something great and unique.

I highly recommend this exciting jerky and rate it 10/10.

This clear resealable bag has labels affixed to both the front and back. The bag is vacuum sealed, the best way to keep jerky fresh tasting. The Shiners Stash logo is a man with a rather large, bushy beard.

Their slogans are “Get Your Own!” and “Made in Foothills of NC”.

The only minor bag category missing is the jerky weight not stated in grams. There is a very good blurb printed on the back about Shiners Stash. You are encouraged to like them on Facebook, and Shiners Stash are a proud member of gottobeNC.com.

Tyler Sanford -- So me and my budy was walking around the flea market the other day and stumbled across the pot of gold y'all call shiners stash jerky and it is by far the best jerky I have ever tasted not only that but the experience was even better thanks to Mr.Steve not only was he a absolutely amazing salesmen but he was just a nice person in general. Absolutely loved how he would explain the different flavors as they came while chewing some of the jerky especially the sea salt and dill pickle. He made sure that we knew all of the credit of the flavoring went to his "I don't know how he even does it " amazing chef but it just wouldn't have been as great without him! Thanks Mr.steve for a wonderful experience and the wonderful jerky!!!

Taste Review

These strips of jerky are large in size, and they are sliced to a medium thickness. The texture is between dry and tender, where this jerky sort of crumbles in your mouth while chewing, in a good way. There are no signs of fat, and handling this jerky leaves no oily residue on your fingers.

The first tastes detected are light levels of garlic and black pepper. Very quickly an intense heat level kicks in, which packs a serious punch. On a heat scale, the spiciness rates a 5 out of 5, where there is quite the after burn.

For the adventurous, eating a chili pepper with the jerky amplifies the heat greatly.

As for the sweetness, it is at a mild level at best. The tomato paste offsets the heat slightly. Overall, this jerky hits on all cylinders, except for the sweet, which we prefer anyways.

It does not take long for the taste of Cheddar cheese to become apparent, which is authentic tasting. As you chew more, the Parmesan cheese finishes off the flavor. Quite an accomplishment here skillfully combining cheeses with beef jerky to provide a memorable eating experience.

No sweetness is present, which allows a good amount of natural beef flavor, and accentuated even more from the beef base. At light levels are salt, soy, and black pepper. Overall, there is an ample amount of cheese flavor present.
